Man Charged With Running Unlicensed Slaughter Operation

Elgin resident Ethan Grant Guyer, Jr., 59, has been arrested by the Fayette County Sheriff's Office in collaboration with the Iowa Department of Agriculture & Land Stewardship and the Iowa Meat and Poultry Inspection Bureau. He is accused of operating an unlicensed meat and poultry slaughter business for nearly two decades without detection.

Guyer faces multiple charges, including two felony counts of theft, one felony charge of fraudulent practice in the first degree, and a misdemeanor violation of poultry licensing. The total value of the products involved is estimated to be around $200,000, and if convicted, he could face up to 10 years in prison.

According to authorities, Guyer was engaged in the slaughter, packaging, and distribution of beef and swine. During an interview conducted on February 11, 2025, he reportedly admitted to these activities over the last 20 years. In a written statement, Guyer disclosed total sales of $189,560, which pertained to the slaughter and processing of 150 cattle and 500 pigs, charged at 80 cents per pound.

Crucially, the meat that he processed, sold, or donated was not inspected as required by law, rendering it adulterated. The lack of regulatory compliance raises serious public health concerns regarding the safety of the meat products involved in his operations.

This case underscores the importance of inspection and regulation in the meat and poultry industry to ensure consumer safety and uphold food standards. The investigation highlights the risks associated with unregulated food processing practices and the potential consequences for those who violate these laws.
